Do You Wash Cabbage Before Making Sauerkraut?
Mostly no, and there is a good reason. The bacteria that ferment your cabbage live on the leaves. Here is when to wash anyway, what to do instead, and how to recover if you have already washed it.

Mostly, no. You do not wash cabbage before making sauerkraut, and it is one of the few places in a kitchen where not washing something is the correct answer.
The reason is straightforward. You are not adding anything to make sauerkraut. There is no packet of culture, no starter, no yeast. The bacteria that do the work are already living on the cabbage leaves, and washing removes some of them.
That said, there are situations where you should wash, and washing does not ruin a batch. Both are covered below.
What is living on the leaves
A cabbage growing in a field carries a population of microorganisms on its surface — bacteria, yeasts and moulds, in enormous numbers.
Among them are lactic acid bacteria: Leuconostoc mesenteroides, Lactobacillus plantarum, Lactobacillus brevis and their relatives. They are not there in huge proportions. They are a minority among everything else on the leaf.
What makes sauerkraut work is not that these bacteria are numerous. It is that salt and the absence of oxygen give them an advantage. Salt slows the spoilage organisms more than it slows the lactobacilli. Removing air kills off everything that needs it. Within a couple of days the lactic acid bacteria are the only thing thriving, and the acid they produce finishes the job.
So the whole method depends on those organisms being present at the start. That is why you leave them alone.
Where they live on the cabbage
Mostly on the outer leaves, which is where the surface has been exposed to air, soil, rain and insects.
The inside of a cabbage is comparatively clean. A tight head is a natural barrier and the inner leaves have never been exposed to much of anything.
This creates a small tension. The outer leaves carry the most useful bacteria and also the most dirt. The usual compromise is to remove and discard the very outermost leaves — the loose, damaged, weathered ones — and use everything from the next layer inwards without washing.
Those discarded outer leaves have a use, incidentally. Save one or two clean ones, and lay them whole over the top of the shredded cabbage in the jar. They act as a cap that holds the shreds down and catches anything that would otherwise float. Discard them at the end.
What to do instead of washing
Remove the outer leaves. Peel off the loose, dirty, damaged or wilted outer layer. This deals with most of what you would have been washing off.
Wipe if needed. A clean damp cloth over the outside removes surface dirt without soaking anything.
Cut out the core. The dense stem in the middle does not shred well and does not ferment well.
Wash your hands and the equipment, not the cabbage. Clean hands, a clean board, a clean knife and a clean jar. That is the hygiene that matters here.
Look at it properly. Cut it in half before shredding and check inside for damage, rot or insects. A cabbage that looks poor inside is not going to make good kraut.
When you should wash
There are real exceptions, and none of them will ruin the batch.
Visible soil. Mud on the leaves is soil bacteria, and soil carries organisms that have no place in a jar of food sitting at room temperature for a month. Wash it.
Home-grown cabbage from wet ground. Anything splashed with soil in heavy rain needs rinsing.
Slugs, caterpillars and their traces. Home-grown brassicas frequently have passengers. Slug slime and caterpillar droppings are not something to ferment. Wash, and check between the leaves.
Anything you know has been sprayed. If it is conventionally grown and you would ordinarily wash it, wash it.
Anything dropped on the floor.
Cabbage from an unknown source where you cannot see how it has been handled.
The principle is simple. The bacteria you want are a nice-to-have. Not putting soil, slug trails or pesticide residue into a jar you are going to eat from is not negotiable.
If you do wash it
Cold water only. Warm water encourages things to grow and does not help.
No soap, no detergent, no vegetable wash. Any residue will interfere with the ferment and none of it is meant to be eaten.
Do not soak it. A quick rinse removes dirt. A long soak removes far more of the surface bacteria and waterlogs the leaves.
Dry it thoroughly. Water left on the cabbage dilutes the brine and lowers the effective salt concentration. Pat it dry or let it drain properly before you weigh it, because you are about to salt it by weight and wet cabbage weighs more than it should.
Filtered or dechlorinated water if you can. This is the part that matters most, and most people miss it.
The chlorine problem
Mains water contains chlorine or chloramine, deliberately, to kill bacteria. That is its job and it does it well.
Washing cabbage in chlorinated water is therefore doing something rather more thorough than rinsing off dirt. It is applying a disinfectant to the exact organisms you need.
In practice a quick rinse does not sterilise a cabbage and the ferment usually still works. But if you are washing anyway, use water that has had the chlorine dealt with.
Three easy ways: leave a jug of tap water out overnight and the chlorine off-gasses; boil it and let it cool; or run it through a carbon filter. Note that chloramine, which many suppliers now use instead of chlorine, does not off-gas — for that you need a filter or a longer stand.
This applies with more force to any brine you make to top up a jar. Brine made with heavily chlorinated water and poured onto a young ferment can genuinely slow it down.
If you have already washed it
It will almost certainly be fine. Do not start again.
Washing reduces the population of lactic acid bacteria. It does not eliminate them. They are lodged in the surface texture of the leaf, not sitting loose on top of it, and a rinse under a tap removes a fraction.
They are also, frankly, everywhere. On your hands, on the chopping board, in the air, in the jar. Lactic acid bacteria are among the most widespread organisms in a kitchen. A thoroughly scrubbed cabbage in a sterilised jar will still ferment, because it gets recolonised within hours.
What you may see is a slower start. If a batch seems reluctant after washing, three things help.
Add a splash of brine from a live ferment. Two or three tablespoons from an existing jar of sauerkraut, or from a shop-bought unpasteurised one, provides a large active population immediately. This is the most effective fix and it is worth keeping brine in the fridge for the purpose.
Keep it slightly warmer. Around 20 to 22°C for the first few days gets things moving.
Give it more time. A slow start is not a failure. Judge it at three weeks, not three days.
Do you need to sterilise the jar?
No, and this surprises people who have done any canning or brewing.
Canning and brewing both need sterile equipment, for good reasons. Canning seals low-acid food in a jar where anything surviving has no competition. Brewing puts a single yeast strain into a sugary liquid and asks it to outcompete everything else.
Vegetable fermenting is different. You are deliberately encouraging a wild mixed population and giving it conditions where it wins. Sterilising the jar does not help, because you are about to put an unsterilised cabbage into it.
What the jar needs is to be genuinely clean. Hot water and washing-up liquid, rinsed properly, is the standard and it is enough. Look particularly at the rim and the threads, where old residue collects.
If you would rather sanitise, use a homebrew sanitiser and follow its instructions, or a weak bleach solution rinsed thoroughly afterwards. The important word is rinsed — bleach residue in the jar will suppress exactly the bacteria you are relying on.
The hygiene that actually matters
Since the cabbage is not being washed, it is worth being clear about what should be clean.
Your hands. You are going to massage salt into cabbage for ten minutes with them. Wash them properly, and take rings off.
The board and the knife. Especially if either has been near raw meat. Cross-contamination is a real risk and it is the one worth caring about.
The jar and the weight. Clean, rinsed and dry.
The work surface.
And two things that are not about cleaning at all, but do more for safety than any amount of scrubbing: get the salt right at two per cent by weight, and keep everything under the brine. Those two conditions are what make the jar safe. A spotless kitchen and a floating cabbage will still grow mould; a normal kitchen and a properly submerged, properly salted ferment will not.
Other vegetables are different
Cabbage is unusually forgiving. Some other ferments have specific requirements.
Cucumbers must be washed, and there is a second step. Cut off the blossom end — the end opposite the stem, usually the slightly darker or more pointed one. It contains an enzyme that softens cucumbers as they ferment, and leaving it on is the commonest reason for mushy pickles. Trim a few millimetres off and the problem goes away.
Root vegetables need washing. Carrots, beetroot, radishes and turnips come out of the ground and carry soil. Scrub them. They still ferment reliably, because soil is itself full of lactic acid bacteria.
Leafy greens and herbs should be rinsed and dried, for the same reasons as cabbage.
Fruit generally carries plenty of wild yeast and does not need washing unless it is dirty.
Does organic matter?
For this specific purpose, a little.
Some agricultural fungicides and pesticides are designed to suppress microorganisms, and residues can in principle slow a ferment. In practice, conventional cabbage ferments perfectly well and always has.
The stronger argument is the one you would make anyway: if you are deliberately not washing something, you would rather it had nothing on it. That is a reasonable preference and a reasonable reason to buy unsprayed cabbage for this job.
Home-grown is best of all, on freshness grounds as much as anything. A cabbage cut in the morning has more water in it, releases brine more easily and carries a healthier surface population than one that has spent a fortnight in transport.
Where the advice to wash comes from
It is worth knowing why this feels wrong, because the instinct to wash is a good instinct in almost every other context.
Modern food hygiene advice is built around a single assumption: that microorganisms on food are a hazard to be reduced. For nearly everything you cook, that is correct. Wash the salad, scrub the potatoes, cook the chicken through.
Fermenting inverts the assumption. Here the microorganisms are the process. Removing them is removing the method.
The reason this is safe — and it is safe, on a scale of billions of servings over thousands of years — is that fermenting does not rely on the food being clean. It relies on making the environment hostile to anything harmful. Two per cent salt, no oxygen, and within days an acidity below pH 4.6 that nothing dangerous can grow in.
That is a different safety mechanism from washing, and a considerably more reliable one. Washing reduces numbers. Acidity prevents growth entirely.
So the instruction is not "be less careful". It is "the care goes somewhere else" — into the salt percentage, the submersion, and the temperature, rather than into the rinse.
Mistakes worth avoiding
Scrubbing a clean cabbage. There is nothing to gain and something to lose.
Soaking it. Waterlogs the leaves and strips more of the surface population than a rinse.
Using soap or a vegetable wash. Residue interferes and is not food.
Weighing it wet. Throws off the salt calculation, and salt percentage is the one number that matters.
Not washing a genuinely dirty cabbage. The rule is about clean cabbage. Soil, slugs and spray are not things to ferment.
Sterilising the jar with bleach and not rinsing properly. Same problem as chlorinated water, concentrated. Hot soapy water and a thorough rinse is enough for a vegetable ferment.
The short version
Do not wash a clean cabbage. Peel off the outer leaves, cut out the core, wipe it if it needs it, and shred it.
Do wash a dirty one, or a home-grown one with soil or slugs on it. Use cold dechlorinated water, no soap, no soaking, and dry it before you weigh it.
